Apple Charlotte


  • Vanilla Sugar 1 tsp
  • Powdered sugar with vanilla flavour 2 tsp
  • Baking powder 1 tsp
  • 4 Eggs.
  • 100g Sugar
  • 100g Flour
  • 4 Apples

Method :

  1. To prepare charlotte, we need four medium-sized apples, it is better to give preference to sour varieties. We clean the apples from the stalks and seeds, cut into thin slices.
  2. To prepare the dough, sift the flour with baking powder.
  3. Break the chilled chicken eggs into a tall bowl and beat with a mixer, gradually increasing the speed. Add granulated sugar. Continue beating until the mixture thickens and increases in volume.
  4. Set the mixer speed to a minimum and gradually add the sifted flour with baking powder. The dough should be thick, like sour cream, and be homogeneous.
  5. Lubricate the baking dish with butter and sprinkle with flour (you can sprinkle breadcrumbs with sugar instead of flour, so the finished charlotte will have a crispy caramel crust) Put the prepared apple slices into the mould, evenly distribute.
  6. Using a spoon or spatula, we shift the dough into a mould, covering the apples, and level it.
  7. Preheat the oven to 170 degrees. We put the form on the wire rack and send it to the oven for 30-35 minutes. When the charlotte increases in volume and becomes light brown in color, we take it out of the oven, cool a little and take it out of the mould. It is best to turn the warm charlotte on a wire rack and let it cool, so the cake will turn out more even.
  8. With the help of a fine sieve, sprinkle the finished airy charlotte with powdered sugar and cut into portioned pieces, serve to the table.
