Traditional Shashlik: Lamb, Pork, and Beef BBQ
Introduction:
Shashlik is a beloved form of barbecue across Eastern Europe and Central Asia, known for its savory, smoky flavors and festive communal cooking style. This traditional dish involves skewering marinated meat and cooking it over an open flame, making it a favorite at gatherings and celebrations. Shashlik is not just about grilling meat; it’s about bringing people together to enjoy the simple pleasures of freshly cooked, flavorful food.
This recipe offers a classic take on Shashlik using a mix of lamb, pork, and beef, each adding its unique taste and texture to the skewers. The key to perfect Shashlik is in the marinade, which tenderizes the meat and infuses it with robust flavors, thanks to the sparkling water, vinegar, and herbs. Preparing this dish is a delightful experience that culminates in a delicious feast, best enjoyed outdoors and with good company.
Method
- Cut the meat into pieces, onion – into large rings, put in layers in a saucepan, pepper the meat.
- Make a marinade (mix sparkling water, salt, vinegar and a bit of sugar, herbs on your choice, salt, and pepper) and pour meat over it, put the pan in the refrigerator overnight.
- Heat up the coals. Meat mixed with onions put on skewers and fry until tender. Drizzle with wine before serving.
